Every now and again, you’ve just got to let your hair down and make a big, bombastic, silly beer. Higher end of the DIPA spectrum? Check. Double dry-hopped? Check check. The biggest pyramid addition we’ve done to date? Check! Lotus Water is our experiment into seeing how far we can take this technique, and the result on this beer is a spectacular fruit salad explosion of flavour. A huge 30kg addition of Mosaic takes the lead on this beer, imparting that insane medley of stone fruit, bubblegum and blueberry notes that only Mosaic can, accentuated with progressively smaller charges of Amarillo and Centennial for grassy balance, before a final addition of Sabro for a final lashing of tropical pina colada notes. An insane experiment, and if we may say so ourselves, a successful one.
