One of the small glimmers of light from the last twelve months is that we’ve been able to grow as a brewery, not only in size and staff, but in a technological sense too. Midnight Dipper is our first beer run through our brand new centrifuge, meaning we’ve been able to pull almost all the suspended yeast out, but retain all the haze and flavour in the beer that we’ve become so adept at producing. A beer that was ready to drink as soon as it came off the canning line, we’ve loaded the dry hop bill with a now-classic pyramid addition of 15kg of Centennial for old school bite, before 10kg and 5kg additions of Citra and Mosaic to boot for that juicy Polly’s trademark. A sign that our beers can and will get better than they already were from here onwards; here’s to the future. Cheers!
